Roasted Garlic and Rosemary Turkey Meatballs w/ Balsamic Glaze

This week I had the privilege of being asked to take part of St. Louis’ Healthy Happy Hour with Take Shape for Life. It’s always nice to use my Nutrition background to challenge myself and create new menu items for unique diet programs. (And to prove I don’t ACTUALLY soak everything in bourbon, all the time..) Quite frankly, I was extremely surprised at how many ingredients this program allows. There are very few foods their clients can’t eat as long a they stick with portion control. Since we all know how much of a pain it can be to diet during the holidays, I wanted to share this party appetizer recipe I created. These meatballs are perfect for fooling people into eating healthy food. Also because it’s lame to always bring the tray of vegetables.

Roasted Garlic and Rosemary Turkey Meatballs w/ Balsamic Glaze

Yield: 2 Leanest Meat Servings w/6 Condiment servings
Ingredients:

-12 oz Ground Turkey (97%)

-½ Whole Egg

-1 tbsp almond flour

-1 tsp parmesan cheese

-1 tbsp Rosemary, finely chopped

-1 tsp minced garlic

-3 tsp Balsamic Vinegar

Directions:

1.Combine all ingredients except balsamic in a large bowl. Roll into quarter size meatballs.

2.Spray a non-stick skillet with pan spray. Sear meatballs on medium-high heat rotating to brown on all sides.

3.When cooked throughout, pour balsamic over hot meatballs in skillet. Cook for approximately 1-2 minutes until reduced to a thick sauce.
